Prep and serving: 10 minutes
Total cook time: 20 minutes This is an easy meal I made using items I needed to use ASAP from the fridge. This filling meal took me about 30 minutes to make. Because this is a meal used to clear out the fridge I did not have exact measurements, I just used what was left. This was enough for myself. I had a half full box of pre-sliced mushrooms. I also had half a white onion, that I sliced and a medium sized potato that I diced. In a saucepan I brought them both to a boil until they were soft. Because I had it over medium heat this took about 10 minutes. When the items in the saucepan reached my desired softness I drained the water. I then lightly coated the pan with olive oil to brown the potatoes for another 10 minutes and added mushrooms. I love mushroom so I used all could (plus, they are low in calories). For seasoning I added salt pepper Italian seasoning and paprika. During the time I waited for my potatoes to brown and mushrooms to fully cook I made a simple side salad with romaine lettuce and Italian dressing as well as a guacamole. For the guacamole I had a half a jalapeno and a whole avocado. I mashed the avocado until it was smooth then added diced jalapeno. For added flavor used half a lime, salt and pepper. I would definitely make this again because these are things I usually have at home so it is simple! Also because I felt full and satisfied. For time I added 10 minutes for the gathering of items and serving.

With the New Year approaching I have been thinking about what I would like to achieve in the coming months. In June I will be turning 21, I want to feel confident in my body and work towards becoming a physically and mentally stronger. Throughout the year I would like to work on my endurance by running. To track my goals I think it would be fun to participate in fun runs and other competitions. Granted, I have no intention in aiming for a certain time, I just want to be able to successfully complete it. One race I definitely want to participate in is Bloomsday in Spokane. I participated my freshman year at college and loved it! Something about running with thousands of people excites me. We encourage each other. Seeing families cross the finish line together whether they ran, walked jogged it makes me happy. Another race I’d like to participate in is the Happy Girls half marathon in September. This is located in Spokane and flows through the Centennial Trail and River Side State Park. I can imagine the empowering feeling of completing the race with other women who had the same goal and worked hard in their own way. To mentally better myself this coming year I would like to journal how I feel throughout the week all while working on my physical goals. For me this goes hand in hand. Typically I set these goals but I always derail because of boredom or because I didn’t set small attainable goals for myself. Journaling will allow me to track my progress and see the improvement by looking back. This will help me create a better self-image of myself as I’ve always been conscious of my body.
